食品中二氧化硫残留快速检测方法的研究

摘要: [目的] 研究和验证改良碘量法快速检测食品中二氧化硫残留的效果。[方法] 随机采取水溶性食品
94件和水不溶性食品 99件,分别用改良碘量法和国标法进行检测,比较两种方法检测食品中二氧化硫的符合性。[结
果] 两种检测方法对水溶性食品和水不溶性食品中二氧化硫检测结果的符合率为 91. 0%和 83. 4% ,与国标方法相比,
差异均无显著性。[结论] 改良碘量法可以作为食品中二氧化硫残留的快速筛检方法。

Abstract: [ O bjective] To reserch and validate on method for rap id detection of sulfur dioxide in food. [M ethods]
Imp roved iodometric method and GB method were used as parallel exam ination of sulfur dioxide in 94 water - solubility foods and
99 non - water - solubility foods. [ Results] The coincident rate between the two methods was 91. 0% for water - solubility
foods, 83. 4% for non - water - solubility foods. D ifference between the two methodswere both nonsignificant. [ Conclusion]
