油茶籽油脂肪酸蔗糖酯的合成研究

摘 要：用毛油茶籽油和蔗糖经甲酯化与酯交换两步，合成了油茶籽油脂肪酸蔗糖酯，用正交试验法优化了前
步反应条件(摩尔比 5∶1，80 ℃，反应 6 h)，甲酯得率为 79%；用单因素法确定了后步反应条件(摩尔比为(1～2)∶1，
先在 110 ℃反应 h，再在 135 ℃反应 3 h)，蔗糖酯产率为 45%．并对精制产品进行了红外光谱表征．
