-1- 反式脂肪酸的研究进展综述姜楠反式脂肪酸( Trans fatty acids ,简称 TFA) 是指至少含有一个反式构型双键的不饱和脂肪酸的总称。 TFA 已成为近年来一些相关领域关注的焦点。国际组织及世界各国纷纷采取相关措施,降低或限制食品中的反式脂肪酸含量。本文就目前文献中反式脂肪酸的特点、产生、安全问题、测定方法等进行综述。反式脂肪酸;检测方法;研究进展 Advance of the Research on Trans-fatty Acid s Jiang Nan ( Institute of Biomedical and Pharmaceutical Technology ,Fuzhou University , 350002) Abstract :Trans fatty acids(TFA) is generic name ofa type of unsaturated fatty acids that contain at least one double bond in the trans attention has been paid to the TFA in recent years,the latest studies show that TFA are harmful to human body,such as they can accelerate atherosclerosis and induce obesity,diabetes,angiocardiopathy,coronary heart disease and so this reason,strict actions have been taken in many countries to control the contents of TFA in food,in order to support the food quality and ensure the life safety of paper provides an overview of trans fatty acids in oils and fats used in food manufacture in recent years,including their sources,h a zards,determination methods,etc. Key words :Trans fatty acids;detection methods;research progress 0引言反式脂肪酸是分子中含有一个或多个反式双键的非共轭不饱和脂肪酸。在自然界中,油脂主要是以脂肪酸甘油酯的形式存在, 按油脂中脂肪酸碳碳键的饱和程度又可分为饱和脂肪酸和不饱和脂肪酸, 其中不饱和脂肪酸的不饱和双键以顺反 2 种构象存在, 大部分天然不饱和脂肪酸是以顺式构象存在, 但在一些外界条件的影响下, 如光、热、催化剂或加氢反应等, 天然不饱和脂肪酸会从顺式构象转化为反式构象, 具有这种反式构象的脂肪酸即被称为反式脂肪酸( Trans Fatty Acids ,简称 TFA )。 TFA 根据所含的非共轭双键的数量,分为单不饱和
