内容提要:中国文化拥有超过 5 千多年的历史,而且在许多领域,特别是饮食方面,都
做出了重大的贡献。经过长时间的演变,中国饮食文化已经与中国的历史和文化的发展紧密
联系在一起,逐渐成为中国文化的重要组成部分。在中国文化的影响下,饮食文化在宗教、
文学、艺术、医学、政治方面都有明显的表现。如今,中国饮食文化在西方文化和本土文化
的影响下,逐渐形成了一定的发展趋势。如果要进一步了解博大精深的中国文化,中国饮食
文化是一个重要的部分。

1. Introduction
K. C. Chang(1977)once said:“ Chinese cuisine is the greatest in the world. But few can take
exception to the statement few other cultures are as food
oriented as the Chinese. And this orientation appears to be as
ancient as Chinese culture itself.”⑴ The Chinese culture has a
history of more than 4000 years and has made a number of
significant contributions in many areas, especially in cooking.
The great Chinese philosopher Lao-Tsu once said that governing
a great nation is much like cooking a small fish.⑵ From that,
we can see what is the position that food has occupied in
Chinese culture throughout history. To be more familiar with
Chinese culture, one way is to know more about Chinese food
culture. Food culture, as one important part of Chinese culture,
has e intertwined with many aspects of Chinese culture.

2. Some fundamental knowledge about food culture
A. The definition of food, culture, and food culture
First of all, we shall clearly understand the nature of food, culture, and food culture.
Food, as defined in Encyclopedia Britannica, “is any material consisting essentially of protein,
carbohydrate, and fat used in the body of anism to maintain growth, repair, and life

processes and to provide energy”.
